I buy a lot of my groceries online as we don’t have a car and dragging my 1 and 3 year old around the supermarket is not much fun sometimes! The only problem with that is that sometimes you receive unexpected quantities of certain things. For example, this week I ordered some ginger root and received two really giant pieces. So I thought, what a good opportunity to try my and make my first beverage from Nourishing Traditions - Ginger Ale.
Here is the recipe:
3/4 cup ginger, peeled and finely chopped or grated
1/2 cup fresh lime juice
1/4-1/2 cup Rapadura
2 teaspoons sea salt
1/4 cup whey
2 quarts filtered water
Place all ingredients in a 2-quart jug. Stir well and cover tightly. Leave at room temperature for 2-3 days before transferring to refrigerator. To serve, strain into a glass. Ginger ale may be mixed with carbonated water and is best sipped warm rather than gulped down cold.
Let me tell you - this ginger ale is one of the best drinks I have ever tasted! It is incredibly refreshing, sweet and light. It is quite strong, but still very drinkable, on its own but my husband prefers it mixed with half a glass of carbonated water. Yum!

I made up this same recipe a few weeks ago. It was so good. I love it with soda water as well. I also make up the kombucha, featured in NT, but now I’m adding a slice of fresh ginger during the bottling. It is really good…..

Hi Karen, good on you for making the ginger ale. you have inspired me to have a go too! is it nessesary to use rapadura or do you know of an alternative at all? thanks :)

If I don’t have buttermilk for a recipe I will frequently clabber milk by adding fresh lemon juice (1 T. per cup of milk) and letting it sit for 10 minutes. Seems to work nicely.

I used rapadura, but I guess you could always experiment with molasses or palm sugar. Incidentally I left half a bottle in the fridge at my work and forgot about it. I found it maybe two weeks later and it was very fizzy! And very tasty.
